More about molecular mixology
Molecular mixology was inspired by molecular gastronomy. The first example of molecular mixology goes back many, many years and would be the layering of drinks (density and viscosity), as we often see in shooters,
Wikipedia defines molecular mixology as the term applied to the process of creating cocktails using the scientific equipment and techniques of molecular gastronomy.
One area of molecular gastronomy is combining foods will similar chemical compositions. If one ingredient has high levels of amines or aldehydes then they should be combined with other ingredients that contain high levels of amines or aldehydes.
All that sounds very technical and, indeed, molecular mixology, properly applied, is very technical as it is meant to use scientific methods and principles in order to produce the various cocktails.
Currently molecular mixology concentrates on working with the physical properties of drink. This is done by making foams, gels and mists, looking at vapour concentrations and using an appropriate glass, determining cooling properties with ice and also applying heat to caramelise sugars.
These methods enable the creation of greater intensities and varieties of flavour, flavour combinations and different ways of presenting drinks, all of which add up to a very exotic looking cocktail.
However, it is on the emotional side that molecular mixology comes into its own. Molecularly mixed cocktail creations are attractive, eye-catching and something so very different. They add an element of fun and excitement to your event and will be sure to get your guests talking.
